About Kitchen's on Wheels Canada
A Canadian owned and operated company, Kitchen's on Wheels Canada has built more than 200 concession trailers and trucks. Each with washable, white aluminium walls, anti-slip flooring, fluorescent lighting, drink and food refrigerators, three sinks with hot and cold running water, two fryers, a griddle, hot dog steamer and refrigerated condiment unit. All this in a workspace that ranges from 16 to 40 feet in length.

than a concession stand".
Sixty-three per cent of a concession stand's sales are french fries, so Kitchen's on Wheels Canada always installs two fryers that hold 80 pounds of oil and 22 pounds of fries.
A popular concession stand such as Gaetan's Chip Stand in Alexandria, Ontario. Frequently goes through 200 pounds of potatoes a day in the winter, 400 in summer, and 2,000 pounds of potatoes at a weekend fair. In a small community of 3300 people.
Perhaps we lust for fries because they are indulgent and naughty.
